  • long-grain white rice, rinsed until the water runs mostly clear and drained well1 1/2 cups

  • finely grated lemon zest1 tsp

Tutor's tips

  • Rinse the rice well and drain it fully. Extra surface starch can make the grains gummy and more likely to stick to the pot.
  • Do not stir the chicken into the rice before pressure cooking. Keeping the chicken on top helps the rice cook evenly underneath.
  • If your chicken thighs are very large, cut them in half so they cook through in the same time as the rice.
