Ingredients

  • Heirloom tomatoes2 lbs
  • Yellow onion1
  • Garlic4 cloves
  • Fresh basil1 cup
  • Heavy cream1/2 cup
  • Vegetable stock3 cups

Instructions

    Roast tomatoes, onion, and garlic at 400°F for 25 minutes.

    Blend with stock and basil until smooth.

    Return to pot, stir in cream, simmer 5 minutes.
